When making these decisions I always factor in that in prepress we are almost always 9 - 12 months, (sometimes longer) behind on updating to the latest macOS on our Mac's.  Due to Kodak and Enfocus etc not being ready.
So even though the 2021 iMac may stop supporting the macOS that comes out in 2025 or 2026 you would still have another year of viability.

for instance the i5 is a crappy computer, the i7 is much better

There is no i8 CPU. Only odd numbers. i3, i5, i7, i9. The number they were talking about was either 8 core or 18 core except I don't think there is an 18 core for the iMacPro. The link below shows you can either get it with 8 core or 10 core.

What Is a CPU Core?

Here the specs for the iMac Pro with an 8 core CPU with 128 GB of RAM via OWC.

Apple 27-inch iMac Pro (Retina 5K, Late 2017 - 2021) $2199.00 which seems like a good price. Apple used to have some on their refurbished site and they were asking $4K-$5K for one.

Would anyone compromise on the 27 inch BENQ on the mac studio versus the 27 inch Apple display? Maybe it's not a compromise.

About 1300 cheaper.

We had a 24" BENQ monitor at work for an office computer. No issues with it for a couple of year before I left. Never had one on a Mac for Prepress though.

We have 6 BenQ Monitors.
All 27 inch.

Excellent mid to high level monitors meant for what we do in prepress and for designers and photography.
I would recommend also getting the software to calibrate.
It is usually available as a bundle with the monitor.
They come with shades too which we do use.

If we get a new Mac soon the OS will have to go back to Ventura. I think this can be done by erasing the drive and reinstalling the OS..... have never done it before but I don't think it's brain surgery on a brand new computer. But then again, I can manage to turn anything into brain surgery.
