Does Acrobat 8 have a "All Spots to Process" button / tick box somewhere similar to in Ind's ink manager? If so does it do the same CMYK breakdown that Ind does?

Acrobat 8 has an ink manager to remap or convert to process just like the one in Indy, as well as a menu item under Print Production for conversion of colors. Acrobat 9 has an even better set of tools. I'm praying you didn't buy Acrobat 8 tho as IMO it's a bloated POS. 9 while still bloated at least runs decent.
