How do I set the preference for the email icon on the toolbar at the top of the screen?

When I click the email icon it wants to open an email program that I do not use anymore. I want it to default to Apple's Mail program. I thought that it used to be set in the preferences but I do not see any such preference in this version. Any help would be appreciated.

Edit: Once you set it here any app that opens the email program should open the system wide default email program which is what this sets.

Yes - Safari is the same way. You actually have to open it and change the Preference for your default browser, otherwise Safari will open every time you click a link in an email or elsewhere.
