Jailbreak iPhone without service

My iPhone 4 is collecting dust, figure I'll sell it soon but was thinking about jailbreaking it just for kicks. Can I do that without service, or will it be impossible to do anything with that way?

It should have wifi ability without the service.

I have an old iPhone 3 and I took it to the AT&T store to get a dummy SIM card installed (it was free). This basically makes it an iPod Touch and still has wifi ability. I never needed to jailbreak it.
