Simulation profile question

Acrobat 7 Professional Mac OS 10.4.10
I have a job where the black appears to be built of of all 4 colors. The client sent me a screen shot showing a reading of 100 black. He is using US Web Coated SWOP as the simulation profile. I use one I made based on our 6-color press.
I notice color values change in the Output Preview window depending on which simulation profile I use. The values are only a simulation - correct? In other words, picking different simulation profiles DO NOT change the actual file? When I drop the pdf into a hot folder (nexus rip) the black comes out built.

Is the text CMYK in Pitstop? If it's RGB it will show as black 100% in the seps preview window but will come out as CMYK in Nexus usually. I've also see it happen when there is an embedded profile in the PDF. Usually running the "Remove ICC Profiles" Pitstop action takes care of it.
